Mantener la temperatura adecuada durante el almacenamiento, transporte y distribuci\u00f3n es vital para prevenir el crecimiento microbiano, la p\u00e9rdida de propiedades organol\u00e9pticas y el deterioro del producto. Una gesti\u00f3n eficiente de la cadena de fr\u00edo permite a las empresas cumplir con los requisitos sanitarios, normativos y de inocuidad alimentaria, optimizando al mismo tiempo la productividad y la confianza del consumidor. Este curso brinda los conocimientos t\u00e9cnicos, operativos y normativos necesarios para dise\u00f1ar, implementar y controlar la cadena de fr\u00edo en el sector alimentario, asegurando la preservaci\u00f3n de los productos perecederos a lo largo de toda la cadena de suministro.<\/p>\n<p><strong>DIRIGIDO A:<\/strong><\/p>\n<ul>\n<li>Profesionales, t\u00e9cnicos y operarios de las \u00e1reas de producci\u00f3n, control de calidad, almacenamiento, transporte y distribuci\u00f3n de alimentos.<\/li>\n<li>Personal de plantas de procesamiento, centros de acopio, supermercados, restaurantes, empresas de log\u00edstica y transporte refrigerado.<\/li>\n<li>Consultores, auditores y supervisores del sector alimentario.<\/li>\n<li>Estudiantes y egresados de ingenier\u00eda alimentaria, agroindustrial o carreras afines.<\/li>\n<\/ul>\n<p><strong>OBJETIVOS DEL CURSO:<\/strong><\/p>\n<ul>\n<li>Desarrollar en los participantes las competencias necesarias para gestionar y controlar eficazmente la cadena de fr\u00edo en la industria alimentaria, garantizando la inocuidad, calidad y seguridad de los productos perecederos durante todas las etapas del proceso.<\/li>\n<li>Comprender los fundamentos cient\u00edficos y tecnol\u00f3gicos de la conservaci\u00f3n de alimentos mediante refrigeraci\u00f3n y congelaci\u00f3n.<\/li>\n<li>Identificar los puntos cr\u00edticos de control en la cadena de fr\u00edo alimentaria.<\/li>\n<li>Conocer los requisitos legales, normativos y sanitarios aplicables a los productos refrigerados y congelados.<\/li>\n<li>Aplicar buenas pr\u00e1cticas de almacenamiento, transporte y distribuci\u00f3n bajo temperatura controlada.<\/li>\n<li>Utilizar tecnolog\u00edas de monitoreo, trazabilidad y registro de temperatura.<\/li>\n<li>Elaborar e implementar planes de contingencia y mejora continua ante desviaciones t\u00e9rmicas.<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>INTRODUCCI\u00d3N: La cadena de fr\u00edo en la industria alimentaria es un proceso log\u00edstico esencial que garantiza la inocuidad, calidad y frescura de los alimentos desde su producci\u00f3n hasta el consumo final.
