Las alergias en t\u00e9rminos generales alteran la calidad de vida de quien las padece, por tanto es muy importante controlar aquellos aspectos relacionados con los alimentos que pueden impactar negativamente los episodios al\u00e9rgicos de las personas que son susceptibles de tal forma que realizar el control de al\u00e9rgenos en los alimentos, es actualmente una de las exigencias t\u00e9cnicas y normativas que la industria de alimentos debe controlar mediante una gesti\u00f3n efectiva para impedir la aparici\u00f3n de al\u00e9rgenos en la cadena alimentaria.<\/p>\n<p style=\"color: #4e4e4e;\"><strong>DIRIGIDO A<\/strong><\/p>\n<p align=\"justify\">Aplicado a la industria alimentaria.<\/p>\n<p style=\"color: #4e4e4e;\"><strong>OBJETIVOS DEL CURSO<\/strong><\/p>\n<p align=\"justify\">En el marco normativo y t\u00e9cnico existente emitido por FAO, CODEX y OMS, conocer las pol\u00edticas y procedimientos destinados a identificar los al\u00e9rgenos en todas las \u00e1reas de producci\u00f3n, preparaci\u00f3n y servicio de alimentos, para despu\u00e9s aplicar pr\u00e1cticas de gesti\u00f3n de al\u00e9rgenos, incluyendo controles para:<\/p>\n<ul>\n<li>Evitar o reducir al m\u00ednimo la potencial contaminaci\u00f3n cruzada con al\u00e9rgenos que supone la aparici\u00f3n de alergia alimentaria para el usuario (consumidor) del producto alimentario.<\/li>\n<li>Evitar o reducir al m\u00ednimo la posibilidad de la presencia de al\u00e9rgenos no declarados en un alimento debido a errores en la cadena de suministro.<\/li>\n<li>Garantizar que se aplica la etiqueta correcta en materia de al\u00e9rgenos a los alimentos preenvasados.<\/li>\n<li>Garantizar que se puede proporcionar informaci\u00f3n al consumidor, de la posible presencia de al\u00e9rgenos en alimentos No envasados y\/o empacados en el punto de venta<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>INTRODUCCI\u00d3N Las alergias alimentarias, se han convertido en un problema relacionado con la inocuidad de los alimentos lo cual indudablemente es un aspecto a controlar debido al impacto sobre la salud individual y publica.
